Shui Xian Tea, a tea plant native to Fenghuang Mountain in Chaozhou, has been recorded as being cultivated since the Southern Song Dynasty(AD1127-1279), making it the ancestor of oolong tea. Shui Xian, nicknamed "Bird's Beak" by locals for its beak-like leaves, offers a mellow, rich flavor with a sweet, soft aftertaste and a nectar-like aroma. Currently, Fenghuang Mountain tea farmers no longer plant new Shui xian seedlings, preferring instead to cultivate popular varieties like Mi Lan Xiang, Zhi Lan Xiang, and Ya Shi Xiang. The remaining Shuixian tea trees are at least as old as the 1980s, resulting in a tea with exceptional character and a worthy tasting experience.

凤凰水仙,是潮州凤凰山的原生茶树,南宋时期已经有种植记录,是乌龙茶的老祖宗。水仙,因其叶型似鸟嘴,又被当地人称之为“鸟嘴”。口感醇厚,滋味浓郁,回甘甜软,果蜜味好。现时凤凰山茶农都不再新种植水仙新茶苗,大多数都种蜜兰香,芝兰香,鸭屎香等热门品种,现有的水仙茶树至少都是上世纪七、八十年代的老茶树,所以性格比非常高,值得一品的茶。
